It does, but not the way many think. A wood oven gives high heat and speckled crust, but without well-fermented dough it saves nothing; a good electric oven with good dough makes better pizza than wood with rushed dough. Ask how many hours the dough ferments — a pizzeria that knows, says so. The oven is visible from the dining room; dough you taste.

For Neapolitan pizza with soft dough, dine in — after fifteen minutes in the box it becomes something else. For thin and crispy pizza, delivery survives the trip.
